Production Process
- Washing and Peeling: First, fresh potatoes are placed in a washing machine, where water jets and rotating brushes remove dirt and sand from the surface. Next, a peeler efficiently removes the potato skin using a grinding mechanism, providing clean, smooth potatoes for the slicing process.
- Slicing and Shaping: The peeled potatoes are fed into the slicer. By adjusting the blade spacing, this machine slices the potatoes into thin, uniformly thick slices—a critical step for ensuring the chips are crispy and cook evenly.
- Blanching and Color Preservation: The sliced raw potato chips enter the blanching machine. Blanching in hot water not only removes excess starch from the potato surface—preventing sticking during frying—but also deactivates enzymes, serving to preserve color and pre-cook the chips.
- Dehydration: After blanching, the potato chips retain a significant amount of moisture on their surface and must be spun dry at high speed in a dehydrator. This step is crucial as it effectively shortens frying time, ensures uniform color in the finished product, and reduces excessive oil absorption.
- Frying: The dehydrated potato chips are then fed into the frying equipment for cooking. By precisely controlling the oil temperature, moisture evaporates rapidly, resulting in a golden, crispy texture.
- Oil Removal: Since fried potato chips have a high oil content, a high-speed centrifuge is used to remove excess oil from the surface. This results in a crisp, non-greasy texture and aligns with modern healthy eating standards.
- Seasoning and Mixing: The de-oiled potato chips are placed in a seasoning machine along with specialized seasoning powder. Through the drum’s uniform agitation, each chip is coated with just the right amount of flavor.
- Packaging: Finally, the finished product is processed through a packaging machine for portioned sealing, completing the entire transformation from raw material to finished product.
